Ingredients:
- 1 lb ground beef
- 0.5 lb Italian sausage
- 1 carton (32 oz) beef broth (made with bullion or store-bought)
- 1 carton (32 oz) chicken broth (made with bullion or store-bought)
- 1 cup whipping cream
- 1 can (14 oz) stewed tomatoes
- 1 jar (24 oz) your favorite spaghetti sauce
- 1 box (about 12 oz) of your chosen noodles (crushed)
- 2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- Italian seasonings (oregano, garlic, etc.)
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions:
- Cook Meat:
- In a large pot or Dutch oven, brown the ground beef and Italian sausage over medium-high heat until fully cooked. Drain any excess fat.
- Prepare Broths:
- Add both the beef and chicken broths to the pot with the cooked meat. Stir well.
- Add Stewed Tomatoes:
- Pour in the can of stewed tomatoes (undrained) into the pot. Break up the tomatoes with a spoon.
- Stir in Spaghetti Sauce:
- Add your favorite spaghetti sauce to the pot, stirring to combine.
- Season and Add Noodles:
- Season the soup with Italian seasonings, such as oregano and garlic. Crush the noodles and add them to the pot. Stir to combine.
- Simmer Until Noodles are Cooked:
- Bring the soup to a boil, then reduce the heat to a simmer. Cover and cook until the noodles are tender, stirring occasionally. This should take about 10-12 minutes.
- Prepare Ricotta Mix:
- In a separate bowl, mix the ricotta cheese with shredded mozzarella and a sprinkle of Italian seasonings.
- Add Whipping Cream:
- Stir in 1 cup of whipping cream into the soup, mixing well.
- Incorporate Ricotta Mix:
- Add a portion of the ricotta and mozzarella mix into the soup, stirring until it’s fully incorporated. Save some for serving.
- Simmer and Adjust Seasoning:
- Let the soup simmer for a few more minutes to allow the flavors to meld. Taste and adjust the seasoning with salt, pepper, or additional Italian seasonings if needed.
- Serve and Garnish:
- Ladle the soup into bowls. Top each serving with a dollop of the reserved ricotta and mozzarella mix. Garnish with fresh basil or parsley if desired.
- Pair with Garlic Bread:
- Serve the lasagna soup with homemade garlic bread or breadsticks for a complete and satisfying meal.
