Jack-O’-Lantern Stuffed Peppers

Ingredients:
- 4 orange bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup black beans
- 1 cup salsa
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Shredded cheddar cheese for topping
- Optional garnishes: sour cream, chopped cilantro
Instructions:
- 1. Preheat your oven to 350°F. Cut off the tops of the bell peppers and remove seeds and membranes.
- 2. In a large skillet, cook ground beef until browned. Drain excess fat.
- 3. Add cooked rice, black beans, salsa, chili powder, cumin, salt, and pepper to the skillet with the beef. Mix well.
- 4. Spoon the beef mixture into the hollowed-out bell peppers.
- 5. Place stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes, or until peppers are tender.
- 6. Remove from oven and sprinkle shredded cheddar cheese on top of each pepper. Return to oven for an additional 5 minutes, or until cheese is melted.
- 7. Serve hot with optional garnishes like sour cream and chopped cilantro.
