Ingredients:

  • 4 orange bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup black beans
  • 1 cup salsa
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Shredded cheddar cheese for topping
  • Optional garnishes: sour cream, chopped cilantro

Instructions:

  • 1. Preheat your oven to 350°F. Cut off the tops of the bell peppers and remove seeds and membranes.
  • 2. In a large skillet, cook ground beef until browned. Drain excess fat.
  • 3. Add cooked rice, black beans, salsa, chili powder, cumin, salt, and pepper to the skillet with the beef. Mix well.
  • 4. Spoon the beef mixture into the hollowed-out bell peppers.
  • 5. Place stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes, or until peppers are tender.
  • 6. Remove from oven and sprinkle shredded cheddar cheese on top of each pepper. Return to oven for an additional 5 minutes, or until cheese is melted.
  • 7. Serve hot with optional garnishes like sour cream and chopped cilantro.
