Homemade Chicken Taquitos
Ingredients:
Flour or corn tortillas (your choice)
1 rotisserie chicken, shredded
1 block of cream cheese
1/3 cup sour cream
1/2 cup salsa
1 1/2 cups shredded cheese (choose your favorite)
Instructions:
Start by shredding the rotisserie chicken. You can often find pre-cooked rotisserie chickens at your local store for convenience.
In a mixing bowl, combine the shredded chicken with the cream cheese, sour cream, salsa, and shredded cheese. Mix until all ingredients are well combined, creating a creamy and flavorful filling.
Warm the tortillas in the microwave for about 20-30 seconds to make them more pliable for rolling.
Take 2-3 tablespoons of the chicken mixture and place it in the middle of each tortilla.
Roll up the tortillas tightly, enclosing the filling. Secure each taquito with a toothpick to prevent them from unrolling during frying.
Heat up some oil in a skillet over medium heat. Once the oil is hot, carefully place the taquitos into the skillet, seam side down.
Fry the taquitos for 2-3 minutes on each side or until they turn golden brown and crispy.
Remove the taquitos from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Serve your Homemade Chicken Taquitos while they’re still warm, with your choice of dipping sauces such as sour cream or salsa.
