Ingredients:

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 can cherry pie filling
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • Chocolate shavings for garnish

Instructions:

  • Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  • Stir in boiling water until the batter is smooth.
  • Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool completely before assembling the cake.
  • Whip the heavy cream and powdered sugar until stiff peaks form.
  • To assemble the cake, place one layer of chocolate cake on a serving plate. Spread cherry pie filling on top, followed by a layer of whipped cream. Repeat with the second layer of cake and top with remaining whipped cream.
  • Garnish with chocolate shavings before serving.
