Fatija Chicken Casserole

Ingredients:
- 1 lb chicken breast, cooked and shredded
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 10 flour tortillas
Instructions:
- Preheat your oven to 350°F.
- In a skillet, sauté the onion, bell pepper, and garlic until softened.
- Add the shredded chicken, diced tomatoes, sour cream, cumin, chili powder, salt, and pepper to the skillet. Stir to combine.
- In a greased baking dish, layer half of the tortillas on the bottom.
- Spread half of the chicken mixture on top of the tortillas.
- Repeat the layers with the remaining tortillas and chicken mixture.
- Sprinkle the shredded cheddar cheese on top.
- Cover with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
