  • 2 acorn squash, halved and seeds removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 lb ground turkey
  • 1/2 cup quinoa, cooked
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 teaspoon dried sage
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Place the acorn squash halves on a baking sheet, cut side down, and bake for 30 minutes.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the onion and garlic, sauté until softened.
  5. Add the ground turkey and cook until browned.
  6. Stir in the quinoa, cranberries, pecans, sage, salt, and pepper.
  7. Scoop the turkey mixture into the partially cooked acorn squash halves.
  8. Return the stuffed squash to the oven and bake for an additional 20 minutes, or until the squash is tender.
